Mashing Garlic
 Mashing Garlic

Take a bulb of garlic and press down on it, using your hand, to break it into sections (known as cloves).
Use a single, but wide bladed knife for this. Place one garlic clove onto a cutting surface, then place the knife's blade, the part where it meets the handle, over the clove.

Hold the knife into position (with one hand) and press down on the blade (with the other hand) to crush the garlic clove.
Allow the handle to hang over the board, so that the blade touches the board. The handle helps to keep the knife's blade positioned in place.
Lift up the knife and pick apart the skin, then cut off the garlic's dark tip. To mash the garlic, simply repeat placing and pressing down the knife over the garlic.
