Zesty Chicken Wings

Fresh orange zest and juice is what give these wings a zingy flavour.
Ingredients:

  • 12 - 20 chicken wings
  • 1 tbsp garlic powder
  • 1 - 1/2 tsp paprika
  • 1/2 - 1 tsp cayenne pepper
  • 2 - 3 tsp chicken base powder
  • zest and juice of 1 orange
  • juicer
  • grater
  • large mixing bowl
  • spoon
  • glass bowl or container
    parchment paper
  • roasting or baking sheet (jelly roll pan)

How:
In a large mixing bowl, combine: garlic powder, paprika, cayenne pepper, chicken base powder, and orange zest and juice. Wash and dry wings well and then add to bowl. Toss wings well to coat wings evenly with marinade, using your hands. Transfer wings and marinade to a glass container and cover well with plastic film. Allow to marinate for 30 minutes or overnight, in the refrigerator. Don't marinate wings in a metal container, because the orange's acid can slightly corrode the metal. And, if using a plastic bowl, the spices can stain the plastic.

When you're ready to bake them, place an oven rack on the second to lowest level in the oven and preheat oven to 400'F. Line baking pan with parchment paper and allow paper to run up sides of pan. Toss wings in marinade and then everything to pan. Bake for 35 - 45 minutes, turning wings over twice. During the last few minutes of baking, baste wings with pan juices and fat drippings. To test for doneness: place the largest wing on a white plate and tear open; juice should run clear not pink. If juices are pink, return to oven and continue baking and checking every 5 minutes. And, remove any smaller wings, because they will have been cooked before the larger ones.
