Sesame Chicken

Tender chicken with nutty sesame seeds. Serves 1 ...

Ingredients:

  • 1 - 2 tsp sesame seeds
  • 1/2 chicken breast, boneless, cut into 1-inch pieces
  • 1 tsp oil of choice
  • 1 small onion, skinned and sliced in wedges
  • 1/4 tsp chicken base powder
  • 1/8 - 1/4 tsp garlic powder
  • optional flavourings of choice
  • 2 - 3 tbsp water
  • 1/2 tsp lemon juice
  • salt and pepper to taste
  • cutting surface
  • single bladed knife
  • non-stick frying pan
  • ceramic plate
  • 2 wooden forks

Notes:
This recipe can be doubled, tripled or quadrupled. Increase the cooking time of the chicken and the onion accordingly.

Along with the garlic powder, additional flavourings can be added to spice up things: cumin, cayenne pepper, chilli and so on. Additional vegetables can be added along with the onion: red or green bell peppers, mushrooms, blanched sweet peas.

How:
Wash and cut the chicken into 1-inch pieces.

In a non-stick frying pan, lightly toast the sesame seeds on high heat until the seeds take on a light golden colour and their aroma becomes apparent, stirring continuously. Transfer the seeds to a ceramic plate and reserve for later.

In the same frying pan, add in the oil and chicken, and then add in: chicken base powder, garlic powder and additional flavourings. Brown the chicken for 2 - 3 minutes, stirring frequently using 2 wooden forks. Add in the onion and continue cooking for 1 - 2 minutes or until the onion is slightly wilted (but not browned) and the chicken is firm and juices run clear, not pink. Add in 3 - 4 tablespoons cold water and the optional lemon juice, and then deglaze the pan, reducing the liquid to a small amount. Serve the chicken over your favourite rice and then sprinkle the toasted sesame seeds over everything.
