Chicken & Mushrooms

Tender chicken and mushroom morsels, lightly spiced with cumin and paprika. Makes about 5 -6 cups.
Ingredients:

  • 3 - 4 large chicken breasts, skinned and deboned
  • 2 tbsp oil: canola or vegetable
  • 8 ounces mushrooms, cleaned and thinly sliced
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 1/2 tablespoons chicken base
  • 1 cup cold water
  • juice of 1 lemon, strained
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 1 - 2 tablespoons sesame seeds
  • single bladed knife
  • cutting surface
  • large nonstick frying pan
  • colander
  • measuring cup
  • paper towels
  • ladle

How:
Cut chicken into bit size pieces. In large nonstick frying pan, brown the chicken pieces with the oil, over medium-high heat, for 3 - 5 minutes, or until firm and juices run clear, not pink. Add in the mushrooms and continue to sauté them for 3 - 6 minutes, or until mushrooms are wilted.

Sprinkle in the ground cumin, paprika, garlic powder and chicken base, and cook for 1 minute. Pour in the lemon juice and 1 cup of water, then bring everything to a boil. As it reaches a boil, prepare the thickening solution for sauce.

In a measuring cup, combine the cornstarch with the water, stirring well to dissolve the cornstarch.

Remove the pan from the heat and pour the thickening solution into the chicken and mushroom mixture. When adding a cornstarch solution into it, always remove the pot from the heat to stop it from boiling and creating tiny lumps; whisking vigorously to further avoid creating lumps; the gravy will turn white, though it will return to its original colour when thickened.

Return the pan to high heat and continue stirring the contents until they have reached a boil and have the sauce has thickened. Once thickened, remove the pan from the heat and transfer the mixture to a serving bowl and sprinkle with sesame seeds, and then serve.

Looking Back at Everything You've Made!
Adding the cornstarch seems tricky, but it's not. To avoid lumping, simpy follow the recipe: remove from heat when adding the cornstarch solution and whisk well during reheating.
